From my coconut curry experiment, I had some left over bok choy and fresh ginger, and this made a delightful warm-salad substitute. Very much like sautéed spinach, but more cost effective. : )
Stir-fry Bok Choy with Ginger
adapted from Food Network - Robin Miller
Ingredients:
8 cups bok choy, chopped
1 T. minced ginger
2 cloves minced garlic
2 T. soy sauce
1 T. olive oil
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add ginger and garlic to skillet, and sauté for 1-2 minutes, until fragrant.
3. Add soy sauce and bok choy, and cook for 5 minutes, stirring occasionally.
