Fluffernutter Brownie Batter Ice Cream


This is by far my favorite ice cream that I've made so far. If you don't like peanut butter that much, use 1/4 cup. Also: I want to eventually figure out a better way to do the brownie chunks, which may involve making a brownie recipe without eggs, then balling up the thick fudge and using that. We will see, but this recipe is so easy to make, I can't imagine not doing so again in the future. A little bit goes a long way with this ice cream, though it has such a light, heavenly texture it's still very dense taste-wise.

Fluffernutter Brownie Batter Ice Cream

Ingredients:
1 - 14 oz. can sweetened condensed milk
2 cups cream
1/4 - 1/2 cup peanut butter (depending on affinity for pb)
1/2 cup marshmallow fluff

for the brownie chunks:
1/4 box brownie mix
2 Tbs butter
1 Tbs water

Instructions:
1. Place a large mixing bowl in the freezer for 10 minutes.
2. In a medium sized mixing bowl, beat the peanut butter and condensed milk together until well blended. Fold in the marshmallow fluff until just combined.
3. Combine all brownie chunk ingredients, and roll into small balls. Set aside.
4. Take the bowl out of the freezer, and beat the heavy cream with an electric whisk until  stuff peaks form.
5. Fold the whipped cream into the peanut butter mixture, then add the brownie bits and fold until dispersed throughout.
6. Place mixture into a covered container and freeze overnight before scooping.

Avocado Shake



This is EXACTLY like the delicious avocado shakes my friend David and I travel to Chicago's China town for. So tasty good! You can probably throw half a banana in here if you want the banana-avocado version : ) Some recipes add chocolate syrup, but I feel this recipe is just perfect as-is.

Avocado Shake

makes 1 serving

Ingredients:
1 avocado
8 ice cubes
1/3 cup condensed milk
1/2 cup milk

Instructions:
1. Place all ingredients in a blender, and blend until smooth.
2. Serve immediately.

Dulce de Leche

Dangerous, delicious recipe! I kept my water just under broiling, so my dulce de leche didn't thicken up completely. But, I liked the way it turned out. Any more caramelized and it wouldn't be drizzle-able.

Ingredients:
10 oz. can(s) condensed milk

Instructions:
1. Peel off labels on condensed milk cans.
2. Get a large pot, place cans in, and fill up to the top of the pot. If the cans aren't covered completely with an extra inch (or two) of water above, then you need a bigger pan.
3. Bring water to a low simmer, and simmer for 2.5 hours. MAKE SURE to keep the cans covered with water at all times. Check every 15 mins or so, and if it needs it, add some more water to the pot.
4. Let cans COMPLETELY cool to room temperature before opening. I just left my cans in the pot of water over night, and by morning they were completely cooled down (slightly rusted at the edges, but the rust washed right off)
